It does seem like the thumb stick button might be assigned to trigger the on-screenkeyboard. To resolve this, please try resetting the controller to its default settings.
This seems like a very easy solution that Microsoft can implement. Surely there is a way to detect USB keyboard connection and then disable the onscreenkeyboard. When the USB keyboard is disconnected just have the onscreenkeyboard activate again.

The best you can do is press try Win+Esc, it will make the OSK disappear but it will come back each time you click the mouse on the document. To date, Microsoft have added no option to outright disable the On-ScreenKeyboard. Hope this helps.
I just got my Series S working with a keyboard and mouse. Edge works great with it through Xbox Insiders. My only issue is whenever I type the onscreenkeyboard always pops up and is annoying. I saw you can hide it through the Windows app but I don’t have a computer.
Go to your computer’s Settings > Accessibility > On the left side, click on Keyboard under the Interaction section. Toggle the On-ScreenKeyboard option to the Off position.
