Select Items in File Explorer in Windows 11
You have many options to select items in File Explorer (Win+E). You can choose to select a single item or multiple items at once in any order. Starting with Windows 11 build 26241 (Canary), Microsoft updated File Explorer so it’s a little easier to see when you have files or folders selected, by adding a thin border to the selected area.

Windows 11 extract all isnt working - Super User
As you noticed, the Windows Extract All functionality only supports extracting/handling one zip file at a time. It opens a dialog for the primary selection rather than all selected files. You can use alternative programs to extract multiple selected files at once. For example, 7-zip supports doing so:

Is there a keyboard shortcut to "unselect" in Windows Explorer?
A third-party app or plugin may give it this "feature", but no, in Windows Explorer, CTRL-A does NOT toggle a selection. Pressing it once selects all files, pressing it again while all files are already selected does nothing. Using it to select all and then holding CTRL and unselecting a few entries, and then using CTRL-A again returns the selection to All.
